Enchilada Casserole or Pastel Azteca
This recipe for Pastel Azteca is a traditional Mexican dish similar to lasagna and is also known as Mexican Lasagna or Tortilla Casserole. The recipe may vary depending on the region, but this version consists of red sauce or salsa verde, jalapenos or poblano peppers, cheese, ground beef or chicken, and tortillas. You can get creative and use whatever ingredients you have to make your next dinner unforgettable!
For the sauce, you’ll need 2 tbsp of vegetable oil (or as needed), 4-5 chile guajillo, two chiles Morita, 2 Roma tomatoes, 1/2 white onion, four large garlic cloves, 2 tbsp chicken bouillon (2 cubes), 1 tsp Mexican oregano, 1 cup of Mexican sour cream, and 2 cups of water or chicken broth.
For the filling, you’ll need one pound of lean ground turkey, ground beef, or shredded chicken, cooking oil as needed, 1/2 white onion, two garlic cloves, two large jalapenos or two roasted poblano peppers, salt and pepper to taste, 1 tbsp NM chile powder, and one can or two cups of fresh corn. You’ll also need 18 corn tortillas, canola oil to fry the tortillas, and 4 cups of your favorite melting cheese

    Those toppings you used on your pizza look great! Definitely going to give those a try. I have a Ooni 16 gas oven, it gets over 800° F in 15 to 20 minutes and will cook a pizza in 30 to 60 seconds. I'm looking for a better sized oven with a taller opening like your's has, but it seems the ovens that aren't way overpriced all have a problem with the gas burners and won't reach the high temperatures needed.

    How do you repair a small crack in a shallow clay pot. I just bought and cured it, now it has a hairline crack. It's has a stamp of being lead free btw.BTW. my bigger clay pot I strictly use for beans, nothing else. The shallow one I use for chicken mole. I'm afraid it might bust as soon as it gets hot.

    What did you add the 4 Roma tomatoes and 2 Serrano peppers? It looked like a lemon or lime. When you removed the pan from the heat there was more in the pot. Just curious 😊😊😊
